The olive tree is the symbol of life, it is resistant, centuries-old and does not fear time, and is certainly the best representative of the Gargano. Its roots adapt to all lands. It is young and green at all times. The olive tree is also the symbol of the family, it never abandons its leaves as parents never abandon their children. Its fruits are the perfect nourishment. The oil derived from olives was a commodity for the farmers; a liter of oil, at the time of the barter, was exchanged for enough flour to fill a sack. The olive tree is and will remain the eternal symbol of the Gargano, the land of dreams, and the olive harvest will always remain in the memory of its people.
